FIELD: food industry.
SUBSTANCE: this invention relates to production of puffed bakery goods, in particular - expanded bakery goods and to a method for production of natural-looking bakery goods using a rotary cooking boiler. Proposed is a method for production of grain or leguminous bakery goods by way of cooking whole grains or leguminous seeds in a rotary cooking boiler with subsequent puffing of whole grains or leguminous seeds in a mould under pressure. Whole-grain or leguminous bakery goods produced by this method has a natural attractive appearance and ensures manufacture of stronger baked product of grains or leguminous seeds.
EFFECT: invention is aimed at providing the consumer with a snack product made of whole grains or leguminous seeds wit high levels of content of grains or leguminous seeds as compared to traditional bakery goods with simultaneous preservation of such bakery goods non-homogenous appearance which is more attractive for consumers.
