FIELD: food industry.
SUBSTANCE: invention relates to preservation industry and may be used for tkemali, cheery plum, mirabelle and cornel compote preservation. After preliminary preparation and packing into jars, fruits are poured with 60°C water for 2-3 minutes, repeatedly poured with 85°C water for 2-3 minutes. Then the jar is poured with 98°C syrup. The jars are sealed, put into the carrier ensuring mechanical air-tightness and undergo showering with 90°C water during 3 minutes and sterilisation in 100°C water during 10-15 minutes with subsequent three-stage cooling in 90, 70°C and 50-40°C water during 10, 5 and 10 minutes respectively without counterpressure.
EFFECT: invention implementation ensures reduction of heat treatment process duration, preservation of the used raw materials natural components, enhancement of nutritive value, decrease of boiled, cracked and peeled fruits quantity, heat energy, electric energy and water saving, prevention of thermal breakage of jars in the process of heat treatment.
