FIELD: food industry.
SUBSTANCE: invention relates to a method for sterilisation of peach compote with kernels in jars SKO 1-82-3000. The method involves sealing jars filled with compote and putting the jars into the carrier ensuring mechanical air-tightness, sequential heating of the jars filled with compote in a 130°C air flow at a rate of 8.5-9 m/s during 18 minutes and in 100°C water during 35 minutes with subsequent cooling in an atmospheric air flow at a rate of 7-8 m/s during 30 minutes. During the heat treatment process in the heated and the atmospheric air flows the jars are turned upside down with a frequency equal to 0.33 s-1.
EFFECT: invention ensures reduction of heat treatment process duration, promotes preservation of natural components of the raw materials being applied, decrease of quantity of boiled, cracked and peeled fruits, nutritive value increase, prevention of thermal breakage of jars in the process of heat treatment.
