FIELD: food industry.
SUBSTANCE: invention relates to the field of production of bread bakery products, to confectionary flour products. The method envisages usage of sprouted Tyumensky hulles oat grains. Grains are preliminarily soaked in warm water during two days till production of sprouts, milled in a disperser and mixed with the other components according to the formula. The mixture is stirred till moisture content is equal to 16-19 %, moulded and cookies are baked.
EFFECT: invention is aimed at increase of nutritive value and improvement of dietary properties of cookies due to usage of dispersed sprouted Tyumensky hulles oat in the recipe; the said breed has increased content of vitamins and microelements.
