FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to functional vegetable and fruit food products manufacture. The method for production of berry-and-vegetable sauces with snowball tree berries envisages carrots and pumpkin sorting, pumpkin washing, cutting, seeds removal, carrots treatment with steam under a pressure, peel separation by way of depressurisation, peel removal, manual afterpeeling, crushing, scalding with acute steam, pureeing into particles sized 0.8 mm. Tomatoes and snowball tree berries are washed, strained for production of puree or juice with pulp; the components are mixed depending on the sauce being produced; salt, sugar, spices, citric acid are added; the components are heated up to 85°C, packed into a consumer container and sterilised at a temperature of 105-110°C.
EFFECT: sauces manufacture is implemented in a single technological complex according to a low waste technology with vegetable puree yield equal to 80-85% and snowball tree berries puree yield equal to 80%.
