FIELD: food industry.
SUBSTANCE: portioned seasoning is made in the form of flat slices and contains a basic seasoning base, a thickener and a stabilizer. Seasoning also contains seeds of cereal plants. Mass fraction of seeds of cereal plants in the total weight of the product ranges from 1 to 25%. Moisture content of the ready product is equal to 30-55%. Method for preparation of portioned seasoning involves cooking, drying and cutting. Before cooking, the seasoning base is mixed with a thickener and a stabilizer, then the mixture is heated to temperature of 90-93 °C is cooked with continuous stirring for 5-7 minutes. Then the seeds of cereal plants are added to the hot mixture while stirring. Obtained plastic mass is moulded into flat slices with thickness of 1 to 10 mm, dried for 1-6 hours at temperature of 45-60 °C. Duration and temperature of drying are determined from the condition that the mass fraction of moisture of the ready product is 30-55%.
EFFECT: invention is aimed at expansion of the range of seasonings due to heterogeneity of its structure, which improves taste perception, due to balance and high nutritive value, and also allows using the obtained product both as a seasoning and as an independent snack.
