FIELD: food industry.
SUBSTANCE: invention relates to the technology of fish preserves production. The method envisages packing of cut scad, maintained in a salt solution and fried in vegetable oil, and a sauce with subsequent sealing and sterilisation. The sauce is produced by way of cooking a mixture of milled sauteed bulb onions, tomato paste, drinking water, sugar, black hot pepper, allspice, cloves, coriander, nutmeg, nutmeg flower, laurel leaf and acetic acid. Ground pumpkin seeds extraction cake, preliminarily maintained in water for swelling, is introduced into the sauce.
EFFECT: method allows to reduce the manufactured target product adhesion to container walls.
