FIELD: food industry.
SUBSTANCE: invention relates to the technology for production of fish-and-vegetable preserves. The method envisages packing of sprats, fried in vegetable oil, a cut vegetable mixture of carrots and bulb onions and a sauce with subsequent sealing and sterilisation. The sauce is produced by way of mixing and cooking of flour, tomato paste, drinking water, sugar, salt, black hot pepper, allspice, cloves, cinnamon, coriander, nutmeg, laurel leaf and acetic acid. The sauce contains ground pumpkin seeds extraction cake that is maintained (before mixing) in water for swelling.
EFFECT: method allows to reduce the manufactured target product adhesion to container walls.
