FIELD: food industry.

SUBSTANCE: invention is related to food industry and confectionary branch and may be used in candy production. The method envisages the candy mass components mixing in a vessel, candy mass cooking and candy mass products moulding. Candy mass boiling is performed by way of its recirculation through an evaporation circuit including a pump for taking in part of candy mass from the vessel and ensuring its heating in the evaporation circuit, a heater for ensuring additional heating in the evaporation circuit and the required temperature increment and at least one injector device for reverse injection of heated candy mass into the vessel; the said component parts are installed in the vessel upper part over the candy mass surface and are connected with a pipeline string. During the whole of the cooking cycle the level of candy mass in the vessel fails to reach the vessel top. Additionally and in particular, the pump and the heater are joined to form an integrated device while the injector device is designed in the form of a control valve, the vessel equipped with a stirring device.

EFFECT: ensuring production of high quality candies with the required rheological properties of the candy mass; reduction of energy expenditures on candy preparation and reduction of the equipment units number.
