FIELD: food industry. SUBSTANCE: composition contains granulated sugar, syrup and biologically active additive, alcoholic solution of thistle of 20-23% vol. Solution is prepared by extraction of stalks, and/or leaves, and/or flowers, and/or fruits of thistle with content of dry residue, 3.0-3.3%, and density, 0.98-1.01 g/cu.cm. Ingredients are taken in the following ratio, %: syrup, 66-68; alcoholic solution of herb, 8.5-8.9; sugar, the balance. Method for producing caramel involves preparation of caramel mass by mixing sugar with syrup or with invert syrup, its boiling down, cooling, and introduction of flavor additive. Then filling is prepared by mixing preliminarily boiled down sugar syrup with alcoholic solution, then caramel mass is formed as rope, and filling is delivered in it at temperature 63-68 C.
