FIELD: chemistry.
SUBSTANCE: invention pertains to the alcohol industry. The method involves mixing crushed starch-containing material with water in the presence of amylolytic enzyme preparations, heat treatment of the mixture in hydrodynamic and enzymatic treatment apparatus, heating in a contact head to 108-110°C and cooking in a column-type apparatus. The cooked mass is cooled, followed by saccharification with saccharifying enzyme preparations in fermentation tanks in the presence of yeast cells which inhibit lactic bacteria.
EFFECT: invention improves the quality and output of alcohol and lowers the cost of fuel and power resources.
