FIELD: food industry.
SUBSTANCE: invention relates to the technology of preserved appetisers production. The method envisages preparation of the recipe components, their cutting and soft cooking with acute steam. Then one performs vegetable marrows milling and concentration under vacuum until dry substances content is 9-10%. Then one performs cutting and frying in vegetable oil. Carrots, bulb onions and greens are milled. Wheat flour is browned. One mixes and heats all the components, adds with tomato paste, salt, hot black pepper and allspice. One proceeds with the produced mixture packing, sealing and sterilisation. One additionally uses ground pumpkin seeds extraction cake during mixing. Before mixing the seeds are poured with drinking water and maintained for swelling.
EFFECT: produced new appetiser preserves have low adhesion to container walls.
