FIELD: food industry.
SUBSTANCE: invention relates to food industry. The proposed method involves vegetables washing and peeling, milling and exposure to a hypertonic medium impact at a high temperature. The impact is performed by way of vegetables contact with a hot hypertonic solution containing at least one edible salt and having osmolality equal to 1000-12400 mOsm/kg at a temperature of 101-112°C during 1-300 seconds. Then one performs treatment of vegetables subjected to impact of the hot hypertonic medium with a coating mixture, drying of vegetables treated with the hot hypertonic solution and the coating mixture.
EFFECT: said invention allows to manufacture a product with a high content of dry substances, a pleasant texture and a neutral taste.
