FIELD: food industry.
SUBSTANCE: invention relates to cookery field and is intended for manufacture of food products. The method is as follows: one thermally treats a pancake sheet, puts filling into the sheet and forms a filled pancake. For preparation one uses a rectangular pancake sheet. The method for preparation of a filled pancake is implemented in two stages. During the first stage the pancake sheet corner is folded with formation of an area consisting of at least two layers of the pancake sheet. During the second stage the said area is folded along a cross line in a longitudinal direction. The stages are repeated at least two times.
EFFECT: method ensures uniform enclosing of the filling with a pancake sheet, absence of a contact of the filling with the ambient environment with the product butt ends formed of the pancake sheet.
