FIELD: food industry.
SUBSTANCE: invention relates to food industry. The "Long egg" egg roll production method involves eggs shell cracking, their contents dividing into albumen and yolk, the components filtration, stirring (with dried vegetables or greens introduction into albumen), polymer casing filling with one of the egg components and cooling, polymer casing filling with the produced mixture and coagulation, yolk introduction into the albumen mixture centre, heat treatment performance till the temperature inside the egg roll is equal to 78-80°C during 20-21 minutes.
EFFECT: invention allows to expand the possibilities of egg usage for manufacture of new kinds of products with improved taste properties and increase nutritive value of the ready product.
