SUBSTANCE: present invention relates to food products, enriched with sialic acid. One proposes application of bacteria food quality strain producing sialic acid natural origin, for enrichment food product sialic acid. SIALIC acid is produced from bacteria food quality which are selected from the group consisting of: Lactobacillus sakei NCC 121, Lactobacillus sakei NCC 2935, Lactobacillus sakei NCC 2934, Lactobacillus sakei NCC 0.166, Lactobacillus sakei NCC 170, Lactobacillus sakei NCC 1393, Lactobacillus sakei NCC 1428, 1511, Lactobacillus sakei NCC 2937, Lactobacillus plantarum NCC 2936 and Lactobacillus plantarum NCC within 252.
EFFECT: invention allows to identify new source sialic acids used for enrichment of food products.
