FIELD: chemical composition.

SUBSTANCE: present invention is related to a composition containing long chain polyunsaturated fatty acids (LC-PUFAs) and iron (II) sulphate monohydrate. The proposed nutritional composition contains long-chain polyunsaturated fatty acids (LC-PUFA) and a source of iron. Moreover, the source of iron is iron (II) sulphate monohydrate. The nutritional composition is a nutritional composition selected from an infant formula, a milk formula for children from 1 to 3 years of age, a baby food, a cereal-based infant composition, a fortifier, an additive, and a nutritional composition for pregnant or lactating women. The use of an iron source, which is iron (II) sulphate monohydrate, to enrich a composition containing LC-PUFA, a food composition, a method for reducing the oxidation of LC-PUFA in a composition containing an added source of iron, and a method for preventing oxidation of LC-PUFA in the composition containing an added source of iron are also proposed.

EFFECT: invention is aimed at reducing or preventing the oxidation of LC-PUFAs in the composition when adding iron (II) sulphate monohydrate to the composition.
