FIELD: food industry.
SUBSTANCE: invention relates to food industry. The flavoured granules production method involves a cycle with the following stages. Water or liquid binding substance is sprayed onto the initial flavouring agent powder to achieve critical moisture content with pseudofluidisation. For formation of a pseudofluidised layer of the initial flavouring agent powder, the layer is blown over with hot air. Then the initial flavouring agent powder is dried till achievement of an equilibrium moisture content in the powder; ready granules sized 90 - 130 mcm are produced. The cycle is repeated two or more times. The initial flavouring agent powder is represented by powder of a flavouring agent of carbohydrate-containing vegetal raw material or by a vegetal extract produced by spray drying or sugar powder or granulated sugar. The liquid binding substance is represented by an extract produced from carbohydrate-containing plant or a synthesised solution of the flavouring agent or composed carbohydrate-including flavouring agent solution.
EFFECT: invention allows to manufacture a granulated flavouring agent without undesirable related aromas of the initial raw materials and to simplify the flavouring agent production method.
