FIELD: food industry.
SUBSTANCE: invention relates to brewage and may be used for various kind beer production. According to the invention, the wort production involves mixing of water with grain material containing at least 50% of malt, addition of pullulanase to the mixture (pullulanase has more than 60% of enzyme activity at 64°C during 10 minutes at pH equal to 5.0), the said mixture maintenance at 58-68°C during 10-40 minutes and at 75-80°C during 5-20 minutes, wort separation from solid components. One performs mashing within 30-70 minutes. According to the invention, the produced wort is fermented to produce beer.
EFFECT: invention ensures mashing acceleration due to reduction or exclusion of enzymic maintenance during mashing without lowering fermentability of wort wherein the fermentable sugars quantity accounts for at least 75% of soluble carbohydrates.
