FIELD: chemistry.
SUBSTANCE: invention relates to biotechnology and food industry and discloses a mashing method, which includes forming a mash from semolina and contacting said mash with alpha-amylase, glucoamylase and pullulanase, wherein said pullulanase is obtained from Bacillus acidopullulyticus and has the amino acid sequence SEQ ID NO: 4, presented in the description. The invention enables to reduce consumption of pullulanase when producing the mash owing to high activity of pullulanase SEQ ID NO: 4 compared to pullulanase preparations Promozyme 400L and Promozyme D2.
