FIELD: dairy industry.
SUBSTANCE: method for the production of a milk-containing drink with whey protein hydrolysate is characterized in that preliminary cooled purified cheese whey is pasteurized, then cooled, and ultrafiltration is carried out with a protein concentration factor of at least 3.8, UV concentrate is collected to a tank with heat insulation and jacket, heated to a temperature of (50±2)°C, and enzyme preparations are introduced – 1.7% of Promod 439L and 3.5% of Flavorpro 766MDP of the total protein weight in UV concentrate, thoroughly mixed, exposed at this temperature for (6.0±0.5) h for enzymatic hydrolysis of whey proteins. Next, the resulting hydrolysate is subjected to heat treatment at a temperature of (80±2)°C with exposure of at least 5 min, filtered, cooled, and mixed with whole cow milk with mass fraction of fat of 3.4% and defatted milk with mass fraction of fat of 0.05%. The mixture is mixed for 10-15 min, heated to (65±2)°C, and sent to homogenization, then pasteurized, cooled, next sent to intermediate storage and bottling in aseptic conditions.
EFFECT: invention allows for an increase in biological value and reduction in allergenicity of the resulting drink.
