FIELD: food industry.
SUBSTANCE: cheese crackers or snacks are produced by way of mixing of ingredients including at least one flour, cheese, preliminarily gelated starch and water to produce dough containing cheese in an amount of nearly 5 wt % - nearly 60 wt % of the dough weight. The produced dough is extruded through the matrix to produce a moulded rope; the extrusion pressure and temperature ensure starch gelation equal to less than nearly 30% if measured by differential scanning calorimetry; the dough expansion is equal to less than 20% in terms of volume. The moulded dough rope is cut into pieces and baked or fried to produce moulded cheese crackers or snacks with a crispy texture. The cheese cracker or snack produced by the said method has the shape of a cart wheel, ring, pipe, grate, cracknel, screw or spiral.
EFFECT: invention imparts to cheese crackers or snacks a non-glassy, crispy texture, an aerated, non-swollen, cellular structure and increased storage life lasting at least 12 months; there is no need to use flour with high gluten content in the process of the goods preparation.
