FIELD: food industry.
SUBSTANCE: invention relates to the alcohol-free beverages industry. The beverage contains an extract of an animal origin material, represented by a filtrate of a water extract of milled jelly-fish, additives and a preserving agent in an efficient quantity. The filtrate of the water extract of milled jelly-fish is used at a concentration of 30 - 100% in an amount of 900-927.6 g/l of the beverage. The additives may contain sweeteners and/or a flavouring agent and/or an acidifier (represented by apple vinegar or citric acid or lactic acid in an amount of 10-25 g/l of the beverage) or a mixture of fructose and glucose (at a weight ratio of 10:3) in an amount up to 65 g/l of the beverage. When a sugar substitute intended for diabetics is used, the sugar substitute quantity is proportional to its sweetness relative to sugar sweetness. The additives composition may contain sodium alginate in an amount of no more than 2 g/l of the beverage or sodium benzoate in an amount of no more than 4 g/l of the beverage. Additionally, the flavouring agents may by represented by fruit juice concentrates, including dry concentrates, or flavouring agents identical to natural ones, for example, green tea, black tea, cherry, grape and other in an amount up to 16 g/l of the beverage.
EFFECT: invention allows producing a beverage with a sour-and-sweet taste as well as expanding the raw material base for the beverage manufacture.
