FIELD: food industry.
SUBSTANCE: method envisages protein isolation from connective tissues, protein hydrolysate production and modification with a selenium preparation. Connective tissue is represented by veins, tendons, fasciae wherefrom protein represented by collagen is isolated by way of peroxide alkaline hydrolysis. Collagen hydrolysate is produced by way of maintenance during 2.5-3.0 hours at a temperature of 36-38°C with "food collagenase" preparation in an amount of 0.02% of the collagen weight; collagen modification with selenium is performed by way of maintenance with 4.4-di[3(5- methylpyrazolil)] at pH value 8.0-8.5 during 2-4 hours.
EFFECT: manufactured product has enhanced moisture-binding and water-retaining capacities.
