FIELD: food industry.
SUBSTANCE: invention relates to methods for pectin isolation from vegetal raw materials. The method envisages raw materials maintenance by way of swelling in water medium, squeezing, washing with cold water, hydrolysis extraction at a temperature of 95-98°C, hydratopectin solution production, the mass filtration, cooling and packing. Pulp swelling is performed with electro-activated water with pH level equal to 2.0-2.5 at a temperature of 60-70°C during 75-90 minutes, the ratio of pulp to electro-activated water being 1:(12-15). After two-fold washing with cold water one performs squeezing. Then one performs squeezed pulp hydrolysis with orthophosphoric acid solution with concentration equal to 0.2-0.5% at a weight ratio of 1:(7-9) during 3.0-3.5 hours. Then one performs 20-25°C water addition to the mixture of pulp and orthophosphoric acid at a ratio of 1:(10-12) to the squeezed pulp weight and proceeds with extraction under continuous stirring conditions during 20-30 minutes. Then the extract is filtered; the target product is obtained.
EFFECT: invention allows to produce high quality pectin extract with optimal complexing ability.
