FIELD: food industry.

SUBSTANCE: invention relates to food industry, namely to methods for deep and complete processing of beet-sugar production wastes - beet pulp. Disclosed is a method of producing beet pectin extract and tea from squeezed beet pulp, which includes hydrolysis of protopectin from pulp with moisture content of 70–75% for 1–3 days with pulp treatment with powdered crystalline citric acid, consumption of which is 3–6% of the mass of the squeezed beet pulp, squeezing the liquid phase from the obtained mixture to a residual moisture content of less than 40%, filtering, sterilizing, packing the pectin extract, processing of pomace with juice concentrate with consumption of concentrates of 3–30% of pomace weight, drying in an aerobic low-temperature drying installation, packing and packaging of tea.

EFFECT: invention widens the range of methods for producing pectin extract and tea from squeezed beet pulp.
