FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to equipment for processed cheese production. The moulding and cooling device for fluid melted food mass (1) contains two parallel oppositely rotating cooling ribbons (2, 3) positioned at a distance from each other for moulding of a continuous food mass strip. Each of the cooling ribbons encloses an upper (4) and a lower (5) deviating rollers. The cooling fluid medium (7) makes an impact on each cooling ribbon (2, 3) through the tubular feeding channel (8) on the side turned away from the food strip. The tubular feeding channel (8) is formed in the upper field of each cooling ribbon (2, 3) and has multiple output channels (9) positioned side by side. In each output channel (9) one makes a cylindrical recession for formation of a laminar, non-turbulent flow (10) of the cooling fluid medium onto the cooling ribbons (2, 3) during release.
EFFECT: invention ensures enhancement of the quality and the convenience of manufacture of melted food mass combined with simultaneous simplification of the device design.
