FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to a method for production of foam particles stabilised with gel and used for food products aeration, to products containing the said foam and to the method for such products obtainment. The method for foam particles production involves mixing of a foaming substance, a gel-forming substance and gas and initiation of the gel-forming substance conversion into gel under conditions of sufficient shear to obtain foam particles; each particle contains multiple foam bubbles, preferably coated with continuous gel coating. Foam stabilised with gel contains multiple foam particles; each particle contains multiple foam bubbles coated with gel coating; the obtained foam has viscosity equal to nearly 0.001 Pa·s - nearly 200 Pa·s. Products with usage of the said foam are obtained by way of the product mixing with the said multiple foam particles.
EFFECT: invention allows to obtain stable, viscous foam that may be mixed with food products for such products density and thickness reduction.
