FIELD: food industry.
SUBSTANCE: proposed drink creamer contains vegetable oil and proteins and additionally contains baking soda and lemon juice concentrate. Moreover, the lemon juice concentrate contains an acidic component containing citric acid and malic acid. The total amount of added lemon juice in terms of solids content is from 0.5 to 0.8% and the total amount of added baking soda is 0.8-1%. A method for producing a beverage creamer is also provided.
EFFECT: preventing the creamer from flocculating or curdling in hard water.
