FIELD: food industry.
SUBSTANCE: method envisages preparation of farm animal spleen that is preliminarily decontaminated, washed, defatted, soaked, maintained and heated in the protein product with an anticoagulant and a preserving agent addition. Additionally, one uses Rhenninomiin P10Kh enzyme preparation in an amount of 0.03% of the raw material weight; the protein product is represented by a mixture of blood serum and milk whey at a ratio of 1:1.5. Milk whey represents an anticoagulant and a preserving agent; maintenance is performed during 1-1.5 h at a temperature of 20-25°C, pH being 5.2 - 5.8 with subsequent cooling during 15-25 minutes at a temperature of 8-12°C.
