FIELD: meet industry. SUBSTANCE: slaughter blood is preliminarily stabilized, separated, and thus obtained plasma is diluted with water at 1: (1-1.2) ratio. Hydrolysis is carried out by successively adding proteolytic enzymes with different protein specificity under optimal conditions for each enzyme: first, 0.3-0.32 wt % of pepsin and, 1.4-1.5 h later, 0.3-0.32 wt % of protosubtelin. Resultant mixture is allowed to stand for 1.4- 1.5 h to form hydrolyzate, which is pasteurized at 60-65 C for 20 to 30 min.
