FIELD: chemistry.
SUBSTANCE: invention relates to veterinary and biotechnology. The method includes selecting and crushing meat or meat and bone material from a mink carcass; homogenising the material with water in the ratio of 1.0:0.5; dehydrating and heat treatment; performing enzymatic hydrolysis of pig pancreas in amount of 10-15% of the volume of the substrate at 50±2°C, pH 8.0±0.2 for 4-7 hours; inactivating the enzyme at 90±5°C for 15-20 minutes; fractionating by settling for 4-6 hours and drying. The dry hydrolysate is used to prepare a 7% solution on distilled water which, before sterile packaging, is subjected to sterilising filtration by passing the product through a membrane stage with pore size of 1.2, 0.6 and 0.2 mcm.
EFFECT: invention cuts the duration of hydrolysis and increases efficiency thereof, enables to obtain a product in sterile form, having high biological value owing to a higher degree of protein breakdown.
