FIELD: personal use articles.
SUBSTANCE: invention relates to the food industry. The device comprises a hollow thermally insulated housing with an annular insert placed in it, mounted with a gap relative to the wall, the lid and the bottom of the heat-insulated housing. In the heat-insulated housing a circulation loop is formed, filled with liquid coolant, comprising a central duct with an electric heater located in it, and an annular peripheral channel with a tubular heat exchanger located in it for passage of the processed food product, mounted in the annular peripheral channel on the countercurrent circuit. The annular peripheral channel is provided with at least one spiral chute mounted on at least one side of the tubular spiral heat exchanger equidistant to it.
EFFECT: invention enables to intensify the heat exchange process, to reduce the time of heat treatment of the product, to create a part-load mode of heat treatment, which reduces the risk of "burning".
