SUBSTANCE: method for manufacture of preserves of algae and vegetal raw materials includes preliminary separate treatment of the raw materials, milling, separate thermal treatment, recipe mixture preparation, packing and sterilisation. According to the second version, the method for manufacture of preserves of algae and animal raw materials inclusive of seafood includes preliminary separate treatment of the vegetal and animal raw materials, their milling, separate thermal treatment, recipe mixture preparation, packing and sterilisation. The algae are represented by fucus or a mixture of fucus and laminaria there the latter accounts for no more than 50% of the composition. Preliminary treatment of focus is performed by way of its soaking in drinking water at a temperature of 50-60°C during 30-40 min; then focus is cooked for 20-30 min with further frying or stewing during 15-20 min. Apart from seafood, the animal raw materials are represented by homoiotherm animals meat.
EFFECT: invention allows to produce preserves with a softer consistency, to enrich the product organoleptic properties and extend the fish processing industry raw materials base.
