FIELD: food industry.
SUBSTANCE: invention relates to production method for preserved concentrates of first course dinner dishes. Method comprises preparation of recipe ingredients. Cutting and sautéing in melted fat of onions, cooking till weight increases by 150% and pulping of kidney bean, cutting and blanching potatoes, chopping and freezing fresh ornamental cabbages, pork cutting, pulping garlic, sautéing wheat flour in melted fat. Listed components are mixed with sour cream, acetic acid, salt, CO2-extract of pyrolysis wood, hot black pepper, and bay leaf. Produced mixture and bone broth are packed, sealed, and sterilised.
EFFECT: method allows to produce new preserves with usage of non-traditional vegetable raw materials.
