FIELD: food industry.
SUBSTANCE: invention relates to food and meat processing fields of industry, namely to storage of small-piece boneless meat semi-products. Exposition of small-piece meat semi-products from meat with DFD-properties is light violet spectrum and exposition of small-piece meat semi-products of meat from PSE and NOR-properties is light orange spectrum with radiation intensity 65-75 mcwt/cm2, light flux power 45-55 j/with 10-12 minutes every hour during the whole storage period.
EFFECT: increased storage life of semi-finished products in 1,5 times, safety of storage due to absence of food additives in marinade and brine, reduced cost of semi-finished products.
