FIELD: food industry.
SUBSTANCE: invention relates to meat industry, in particular, to chopped meat semi-products. Recipe composition contains trimmed beef and semi-fat trimmed pork with grade 1 DFD-properties, protein-fat emulsion, chicken eggs, milled fresh bulb onions, table salt, electro-activated drinking water, ground black pepper, ground allspice, bread crumbs in specified quantity ratio. Composition includes electro-activated drinking water with pH 5.2-5.5. Protein-fat emulsion includes fat pork side, sodium alginate, apple pectin, milk whey protein concentrate, electro-activated drinking water with pH 5.2-5.5 at following ratio of components 45.0-46.0:1.3-1.5:1.3-1.5:6.5-6.8:45.0-46.0.
EFFECT: provides safety of cooled chopped semi-product of meat raw material with DFD-properties throughout storage period due absence of food additives of preserving action and maintaining an acidic pH value.
