SUBSTANCE: invention relates to preservation industry, in particular to processing of vegetable raw materials, and can be used to produce a homogenised vegetable paste. Rich in vitamines pasta, including beets, onions, tomato paste, sugar, salt, vegetable oil, thickener, vitamines and minerals sources, further comprising garlic, and as a source of vitamins and minerals contains green cabbage, as a thickener - rhizomes of Susak umbrella with the following ratio of initial components, wt.%: 35-40 beets, onions 8-12, tomato paste 3-3.7, 25-39 green cabbage, sugar 2-2.5, 1-1.3 salt, vegetable oil 7-9, rhizomes of Susak umbrella 8-10, garlic 1.5-2. Rhizomes of Susak umbrella are previously subjected to heat treatment in form of blanching for 15-20 min.

EFFECT: invention improves bioavailability of the product, namely the content of macro- and microelements, vitamins, improve the structural and mechanical properties of homogenized paste.
