FIELD: food industry.
SUBSTANCE: invention relates to winemaking industry. 10-20% bentonite suspension is mixed at ratio of 2-3:1 by volume with acylated Chitosan and addition of yeast. Mixture is stirred during 4-6 hours for immobilisation of yeast. Immobilised yeast introduced once or in 2-4 batched in wort and alcohol fermentation to produce white table wine material is conducted. Acetylation of Chitosan is performed using 2-3% aqueous solution of acetic acid.
EFFECT: invention allows to accelerate wort fermentation, improve wine material quality and its resistance to colloidal haze of lipid nature due to transformation of lipids by immobilised cells of yeast during fermentation of wort.
