FIELD: fishing and fish farming.

SUBSTANCE: filletting cut of fish (9) transported tail forward is made along the row of wedge-shaped protruding on back bone (910) radiation bones (92) with width (94) of the wedge, increasing from one radial bone (92) to another by means of pair (20) of disc blades (21) with sharp cutting edges (3). In the direction from the tail end meat of every fish (9) is cut with the help of pair (20) of disc blades, having V-shaped configuration (2), due to the fact that cutting clearance (24) with minimum distance (25) between cutting edges is set equal to the basic value, which, at least in fact, is equal to or less than width (941) of the wedge of last from tail side radial bone (921) of transported fish (9). In the fixed position of V-shaped configuration (2) radial bones (92) pass through cutting clearance (24); at that, cutting edges (3) of disk knives made in their area (31) with a possibility to flexibly deform outward corresponding surface (32) of the disc knife towards restoring force of the material, are pushed by expanding radial bones (92) with an increase in width of cutting clearance (24), overcoming elastic restoring force of material. Corresponding device (1) contains pair (20) of disk knives with cutting edges (3), which, at fixed V-like configuration, can be deformed by the value determined by difference in widths (941, 942) of wedges of radiation bones. Designed for device (1) of disk blades (21) can have area (31) of cutting edges, which, under bend-up pressure, transverse to surface (32) of the disc knife, can be deformed in a wavy manner along cutting edge (3).

EFFECT: invention ensures simplification of the design and increase in output of fillet meat.
