FIELD: processing fish.
SUBSTANCE: invention relates to an apparatus (10) for processing headless fish (11), namely cutting fillet from the lateral bones of fish (11), preferably pre-processed by means of an abdominal cutting unit and a spinal cutting unit. The apparatus includes a conveyor mechanism (12) for transporting fish (11) tail-first in the direction of transportation T, wherein the mechanism is comprised of a closed transporting conveyor (13) with at least one transporting saddle (14) intended for positioning and fixing fish (11), lateral cutting unit (15) comprised of two side cutting units (16, 17) positioned opposite to each other on both sides of the transporting conveyor (13) in the guide (18) area of the transporting saddle, wherein each lateral cutting unit (16, 17) is comprised of a circular cutter (19, 20) driven rotationally and a structure (21, 22) with a counter-surface for said cutter (19, 20). The circular cutter (19, 20) is positioned at a distance from said structure (21, 22) forming a working clearance S, wherein the apparatus is comprised of at least one control tool for moving the lateral cutting units (16, 17) relative to the transporting conveyor (13) from the standby position to the operating position and back. The structures (21, 22) with a counter-surface are configured to adjustably resize the working clearance S during the processing operation. Each structure (21, 22) with a counter-surface is comprised of at least two separate elements (24, 25; 26, 27) with a counter-surface, wherein the first element (24, 26) is located on the lateral cutting unit (16, 17 ) at a fixed distance SA1 from the circular cutter (19, 20) forming a working clearance S and is configured to move upon application of elastic force, and the second element (25, 27) is located on the lateral cutting unit (16, 17) configured to be independently controlled by said element and to move towards the circular cutter (19, 20) and away to change the value of separation distance SA2 forming a working clearance S. The invention also relates to a filleting machine comprising such apparatus (10) and to the corresponding method.
EFFECT: group of inventions allows removal of fish fillet devoid of abdominal fins from skeletal bones.
