SUBSTANCE: device (10) for filleting of beheaded and drawn fish (11) contains a cutting aggregate (12) for fish (11) filleting including at least one pair of disk blades (17, 18 or 19, 20) and a closed-loop conveyor (13) having at least one saddle-shaped support element (14) for fish (11) placement and tail-first movement in the transporting direction T through the cutting aggregate (12). The disk blades (17, 18 or 19, 20) of one pair of the disc blades are actuated in opposite directions. The method involves transporting of fish (11) resting with the back bone (15) on the support element (14), back upwards and tail-first, through the fish filleting device (10). During transporting abdominal bones and/or back bones are cut-off by means of a pair of the disc blades (17, 18; 19, 20). The disk blades (17, 18; 19, 20) of one pair of the disc blades are rotated in opposite directions in the process of cutting.
EFFECT: invention ensures stable position of a fish carcass on the support element in the process of cutting.
