SUBSTANCE: invention relates to food industry. Sweetener composition comprises at least one amino acid and rebaudioside A. Rebaudioside A has purity greater than about 80 % by weight of dry matter. At least one amino acid is present in an amount of about 100 million-1 to about 25,000 million-1. Also disclosed is a sweetened composition comprising said sweetener composition.
EFFECT: invention enables to eliminate inherent unpleasant bitterness of rebaudioside A and delayed sweetness, and to adjust flavour and temporal profile of rebaudioside A and make it more similar to sugar profile.
