FIELD: food industry.
SUBSTANCE: proposed sweetener composition includes at least one carbohydrate sweetener and at least one sweetness enhancer. Sweetness enhancer is selected from (i) a complex β-D-glucopyranosyl ether of 13-[(2-O-β-O-α-D-glucopyranosyl)-β-D-glucopyranosyl-3-O-β-D-glucopyranosyl-β-D-glucopyranosyl)oxy]cahur-16-en-18-oic acid, (ii) a complex β-D-glucopyranosyl ether of 13-[(2-O-β-D-glucopyranosyl-3-O-β-D-glucopyranosyl]-β-D-glucopyranosyl)oxy]-17-hydroxy-caur-15-en-18-oic acid and mixtures thereof. At least one sweetness enhancer is present in the sweetener composition in an effective amount less than or equal to the threshold level of sweetness recognition. Threshold level of identification of sweetness (i) is 25 ppm (parts per million), and the threshold level of identification of sweetness (ii) is equal to 250 ppm. Also disclosed is a sweetened composition.
EFFECT: invention is aimed at increasing intensity of sweetness and reducing the amount of carbohydrate sweetener in the sweetened composition.
