FIELD: food industry.
SUBSTANCE: thawing sensor for products to be stored at temperatures that prevent thawing and then re-thawing, has a sealed envelope with an element disposed therein indicating thawing of food. Display elements are made from a solution of photoactive carotenoid protein orange, colour of which changes dramatically when thawing and re-thawing. At least part of surface of envelope is made from optically transparent material.
EFFECT: use of invention prevents violation of transportation conditions and storage of products.
