SUBSTANCE: invention relates to food, pharmaceutical industry and agriculture. Method of producing modified starch involves preliminary processing of native starch and moulding a starch extrudate. Native starch is selected from potato, tapioca, corn, wheat, rye, triticale, barley, rice, sorghum, amaranth, buckwheat, oat, pea, chickpea and banana or mixtures thereof, is mixed with nanopowder of silver Ag, gold Au, copper Cu, zinc Zn, iron Fe, molybdenum Mo, cobalt Co, tungsten W, titanium Ti, nickel Ni, aluminium Al, magnesium Mg, lead Pb, tin Sn, germanium Ge, gadolinium Gd, Platinum Pt and/or silicon Si and subjected to single- or multiple treatment in ball colloid mill or subjected to single- or multiple extrusion treatment. Extrusion processing can be cold and/or hot and/or high-temperature. Cold extrusion treatment is carried out at temperature lower than or equal to temperature of gelatinisation of starch and not more than 50 °C, moisture content is more than 28 % and pressure less than 10 MPa. Hot extrusion treatment is carried out at temperature higher than gelatinisation of starch, but not more than 120 °C, moisture content 24-30 % and pressure of 9-12 MPa. High-temperature extrusion treatment is carried out at temperature higher than 120 °C, moisture content 14-20 % and pressure 12-20 MPa, after which obtained extrudate is milled.

EFFECT: invention makes it possible to develop highly efficient method of producing consumer starch with good application properties.
