FIELD: food industry.
SUBSTANCE: invention relates to food industry, specifically to non-fried potato chips. Chips, in which number of holes with a smaller diameter of 20 mcm or more is 10 or more holes per mm2 of chips sectional area, and porosity is from 35 % to 65 % on vertical section of non-fried potato chips.
EFFECT: potato chips have a reduced oil crispy texture and good melt in mouth.
