FIELD: food industry.
SUBSTANCE: invention relates to canned foods industry, namely to method for production of peach compote with kernels. Fruits packed in jars are filled in with water with temperature of 85 °C for 2-3 minutes, then filling in is repeated for 2-3 minutes using water with temperature of 95 °C. Then water is replaced with syrup at temperature of 98°C, jars are sealed, put into the carrier ensuring prevention of caps stripping in the process of heating, and heating up in dimethyl sulfoxide solution at temperature of 110 °C during 25 minutes is performed with subsequent cooling in baths with water at temperature of 85 °C for 8 minutes, then 60 °C for 8 minutes and 40 °C for 8 minutes. At that, during heat treatment jars are turned upside down with frequency of 0.33 s-1.
EFFECT: method implementation ensures reduction in preservation process duration, promotes preservation of biologically active components of used raw materials, reduction in boiled and cracked fruits quantity, provides prevention of thermal breakage of jars during heat treatment using high-temperature heat carriers.
