SUBSTANCE: resistant to sterilisation in autoclave milk concentrate contains from approximately 38 % to approximately 50 % of total amount of dry substances of milk, sugar and fat, including dry substances of milk to 26 % and sugar to approximately 30 %. Quantity of sugar relative to amount of dry substances of milk ranges from approximately 1:1 to approximately 3.5:1, so that speed of separation passage milk concentrate is in range from approximately 0.5 TrN to approximately 33 TrN. Ratio of protein to fat content ranges from approximately 0.5 to 0.9. Ratio of protein to content buffer salt is in range from approximately 40 to 60.
EFFECT: product is characterised by slow separation of phases, which positively is on resistance to sterilisation and storage conditions.
