FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method for production of concentrated paste of pumpkin includes fruits washing and inspection, their cutting into segments with size of 50-70 mm, freeing from seeds and internal film, milling into pieces of 3-5 mm. Then, minced fruits are treated for 5-8 minutes in microwave chamber at specific power of 300-350 W/kg, strained through sieve with mesh size of 0.4 mm. Produced puree is concentrated at temperature of 60-70°C and under steam pressure in thermal jacket of 0.4-0.6 MPa till dry substances content of 30-40 %, prepared paste is fed to packing into prepared containers.
EFFECT: invention allows to enhance ready product quality, intensify technological process for production of concentrated paste, manufacture product with high content of dry substances, increase storage life, preserve useful and preventive properties due to reduced time of heat treatment, as well as reduce energy consumption for production of concentrated paste.
